Tasting Note

Honeyed pear, white peach and ginger with apricot and yellow-plum richness; plush, bruléed notes and nutmeg spice. Finishes dry and long, balanced by pithy grapefruit acidity and mineral lift.


Food Pairing

Western: roast pork, creamy pastas, poultry, grilled scallops or lobster, soft cheeses. Asian: miso-glazed salmon, sushi, Thai green curry, spicy Sichuan dishes, mild curries.


Production Method

Fermented in a mix of stainless steel and seasoned French oak cuves using wild or selected yeasts; extended lees contact with full malolactic fermentation; bottled under screwcap. Certified organic/biodynamic.
