Tasting Note
Pale salmon rosé with fine persistent bubbles. Aromas of strawberry, macerated cherry, rose petal and brioche; palate shows red-berry fruit, creamy autolysis, subtle spice, almond and toast, with precise acidity and a long, elegant finish.
Food Pairing
Western: beetroot-cured salmon, glazed ham, roast chicken, creamy pâté. Asian: sushi/sashimi, tempura prawns, pork belly bao, Korean BBQ (pork), spicy Thai salads.
Production Method
Méthode Traditionnelle (bottle fermented), aged on lees ~60 months for the 2016 vintage; hand-riddled and disgorged, minimal intervention.
