Tasting Note
Bright ruby; complex nose of dark cherry, plum, cloves, wild thyme and forest floor. Plush, juicy red-fruit core with gamey, savory spice and fine, chalky tannins; silky mouthfeel and long, mineral-driven finish.
Food Pairing
Western: roast duck, venison, lamb, mushroom risotto, porcini pasta, aged cheddar. Asian: miso-glazed salmon, teriyaki duck, char siu pork, Korean BBQ short ribs, grilled shiitake with soy and mirin.
Production Method
33% whole-bunch, wild-yeast open-top concrete tulip fermentation (~21 days). Aged 12 months in French oak (30% new) then 6 months neutral oak; bottled unfined and unfiltered. Organic/biodynamic viticulture in conversion.

From the Snake’s Tongue parcel (Abel clone planted 2007) within Pyramid Valley’s Mānatu estate at Lowburn. Managed biodynamically/organically under Pyramid Valley team (Huw Kinch, Nick Paulin) with focus on site expression.
