Tasting Note
Bright ruby; aromas of ripe plums, cherries, wild thyme, cloves and forest floor. Plush, silky palate of red and dark fruit, savory spice and gentle game notes with svelte tannins and a long, juicy finish.
Food Pairing
Western: roast duck, lamb, pork belly, mushroom risotto. Asian: duck Massaman curry, soy-glazed salmon, char siu, miso aubergine, Korean BBQ.
Production Method
33% whole-bunch; remainder gently destemmed. Wild-yeast fermentation in open-top concrete tulip for ~21 days; aged 12 months in French oak (≈30% new) then a further 6 months; bottled unfined and unfiltered.
Vineyard Info
Single-parcel Abel clone (planted 2007) at Pyramid Valley Mānatu, Lowburn. Small ~0.7ha block farmed biodynamically/regeneratively with loess over deep silts and pedogenic lime deposits.
