Tasting Note
Golden lemon hue; bright citrus and ripe stone fruit framed by toasty brioche, hazelnut and flinty/mineral saline notes. Concentrated, textured palate with tight acidity and a long, refined finish.
Food Pairing
Roast chicken, beurre blanc seafood, creamy pasta, grilled salmon; Asian: miso-glazed black cod, tempura prawns, sushi (fatty fish), mild coconut curries.
Production Method
Hand-harvested, whole-bunch pressed, natural yeast fermentation with malolactic fermentation; 12–20 months ageing on fine lees in French oak (c.20–25% new), bottled unfined and unfiltered.
