Tasting Note
Flinty, reductive smoke over grapefruit, lemon pith and citrus oil. Saline, chalky texture with concentrated citrus, phenolic grip and piercing acidity. Intense, mineral-driven and long on the finish.

Western: oysters, scallops, grilled white fish, roast chicken, pork belly, creamy pasta, aged cheeses. Asian: sashimi/sushi, miso black cod, tempura, Cantonese steamed fish, milder Thai curries.
Production Method
Biodynamic vineyard. Hand‑harvested, foot‑stomped whole‑bunch press; wild fermentation in mostly older French oak, ~20 months on lees, minimal new oak. Bottled unfined and unfiltered; partial malolactic.
