Tasting Note
Vibrant garnet; brooding dark fruits, exotic spice and floral lift. Palate of umami raspberries, savory resin, fine saline acidity and soft, precise tannins. Earthy, smoky minerality with a long, focused finish.

Food Pairing
Western: roast duck, porcini mushroom risotto, lamb shoulder, aged gouda. Asian: miso-glazed black cod, char siu pork, grilled shiitake dumplings, Korean BBQ short rib (galbi).

Production Method
Hand-harvested, fully destemmed; fermented with indigenous yeasts using gentle infusion (21–27 days); settled, aged 18 months in French oak; bottled unfined and unfiltered.

Pyramid Valley is a highly regarded NZ producer. Waikari site planted 2000–2002, biodynamically farmed on east-facing clay/limestone slopes. Winemaker: Huw Kinch.
