Tasting Note
Perfumed red cherry and raspberry, blood orange and floral lavender, with clove, nutmeg and a wild-forest savoury note; silky, juicy acidity, svelte tannins and a long, ethereal finish.

Roast duck or duck confit, mushroom risotto, herb-crusted lamb, pork belly, grilled salmon; Asian: miso-glazed eggplant, teriyaki duck, char siu pork, mushroom hot pot, Korean BBQ (pork/beef).

Production Method
Biodynamically farmed; hand-harvested, fully destemmed; fermented with vineyard yeasts using infusion (21–27 days); aged 18 months in French oak cuves and barrels; bottled unfined and unfiltered.
