Tasting Note
Perfumed red cherries, raspberry and Morello cherry with rose petal, wild herb and forest‑floor savoury notes. Silky texture, bright mineral acidity, fine silty tannins and an earthy, spicy finish—elegant, intensely aromatic and long.

Food Pairing
Western: roast duck, pork loin, mushroom risotto, charcuterie, grilled salmon. Asian: Peking duck, soy‑braised pork belly, miso‑glazed eggplant, teriyaki salmon.

Biodynamically farmed; hand‑harvested, fully destemmed; spontaneous/wild-yeast infusion fermentation (21–27 days); élevage ~18 months in French oak; bottled unfined (filtered).
