Tasting Note
Lemon-lime and pear with white peach, toasted hazelnut and struck-flint minerality. Medium–full-bodied, racy acidity, saline/chalky finish and subtle reductive tension; concentrated and textural with long persistence.

Western: roast spatchcock or roast chicken, seared scallops, grilled lobster, aged goat or Comté cheese. Asian: miso‑glazed salmon, tempura prawns, steamed fish with ginger & scallions, soy‑ginger scallop dishes.
Production Method
Hand-harvested, gently whole-cluster pressed; long press cycles; fermented and aged mostly in large oak casks/barrels (portion new oak), extended lees élevage (12–18 months); minimal intervention, limited bâtonnage.
