Tasting Note

Citrus and orchard fruit with acacia blossom, hazelnut and wet stone. Bright acidity, saline minerality and a textured, slightly creamy mid-palate leading to a focused, linear, medium-long finish.

Western: roast chicken, buttered lobster, mushroom risotto, aged Comté, creamy pasta. Asian: miso‑glazed cod, seared scallops, sushi/sashimi, tempura prawns, soy‑glazed salmon, pork‑belly buns.

Whole-cluster pressing, native-yeast fermentation in 350L demi-muids, aged in large-format oak (c.15–20% new), minimal batonnage; bottled unfined and unfiltered.
