Powerful, mineral-driven Grand Cru Chardonnay: quince, grapefruit, citrus pith, acacia blossom and white flowers with touches of butter and spice. Broad, textured palate with steely minerality, vibrant acidity and a long, saline, focused finish.

Food Pairing

Western: lobster, crab, scallops, roasted chicken or veal in cream or truffle sauces, foie gras, aged Comté; Asian: miso-glazed black cod, lobster tempura, Cantonese steamed fish, sushi (fatty tuna), soy-glazed duck.

Production Method

Hand-harvested Chardonnay from Corton parcels; whole-pressing, fermentation with indigenous yeasts in large oak barrels, malolactic conversion, restrained new oak (limited % new), 12–18 months élevage, bottled unfined/unfiltered.
