Tasting Note

Ripe pear, nectarine, honeycomb and beeswax with citrus and exotic spice; subtle smoky reduction and stony minerality. Dense, satiny texture and a long, spiced finish.

Western: roast chicken, butter-poached lobster, mushroom risotto, creamy poultry or pork dishes. Asian: miso-glazed cod, seared tuna/sushi (fatty cuts), tempura, slightly spicy Thai or Vietnamese fish dishes.


Production Method

Native-yeast fermentation; aged 14–18 months in large-format demi-muids/350L barrels with restrained new oak; bottled unfined/unfiltered. Sustainable/organic vineyard practices.
