Tasting Note

Pithy, mineral-driven Chardonnay with peach, apple and lemon fruit, subtle pastry and aniseed notes, restrained oak spice and fine salinity. Focused, mouthwatering acidity and a long, tangy finish.

Western: roast chicken, lobster thermidor, mushroom risotto; Asian: miso-glazed cod, seared salmon nigiri, delicate dim sum (steamed scallops).


Production Method

Hand-harvested Chardonnay; fermented with native yeasts in large and 350L oak barrels, restrained new oak (~1/3), aged on lees, bottled unfiltered.
