Tasting Note

Citrus zest, white peach and beeswax with toasted almond and hazelnut notes; chalky minerality and subtle petrol; lively acidity, saline tension and a long, focused finish.

Production Method

Hand-harvested; whole-press; native-yeast fermentation in large demi-muids/350L barrels; modest new oak; extended lees ageing (12–18 months); bottled unfined and typically unfiltered.
