Tasting Note

Concentrated, mineral-driven Chardonnay with lemon peel, green apple, pear, hazelnut, white flowers and flinty salinity. Satiny, tension-filled palate with racy acidity and a long, chiselled finish.


Food Pairing

Western: roasted/quail, seared scallops, lobster with butter, mushroom risotto, aged Beaufort or Comté. Asian: miso-glazed cod, tempura prawns, steamed fish with ginger & scallion, sushi (salmon/sushi-grade tuna), Cantonese steamed lobster.


Production Method

Hand-harvested fruit, gentle whole-cluster pressing, fermented in 350L oak demi-muids with indigenous yeasts, minimal bâtonnage; aged in oak, unfined and lightly or unfiltered.

Domaine Pierre-Yves Colin-Morey (PYCM). Small family holdings; Caillerets is a 0.17–0.18 ha parcel high on the slope inherited from his parents, flagship premier-cru in the PYCM cellar.
