Tasting Note

Fresh citrus and green apple with white peach and tangerine, pronounced limestone minerality, toasted hazelnut, gentle spice and buttered-toast notes; chalky, saline finish with bright acidity and long length.

Western: roasted chicken with herbs, butter-poached lobster, seared scallops, creamy mushroom risotto, Comté or triple-cream cheeses. Asian: miso-glazed cod, yuzu-seared scallops, sushi/ sashimi (fatty fish), steamed fish with ginger & scallion, mild coconut-based Thai dishes.

Hand-harvested fruit; native-yeast fermentation mostly in large barrels/demi-muids; limited new oak, minimal bâtonnage; typically bottled unfined and unfiltered.
