Tasting Note

Pale gold. Crisp citrus, white peach and orchard fruit with white flowers, toasted hazelnut and flinty/mineral notes; bright acidity, medium body and a focused saline-mineral finish.

Production Method

Hand-harvested Chardonnay (En Creuzilly). Long, gentle whole-bunch pressing; cool/crushed grapes, native-yeast fermentation in 350L barrels, malolactic completed, minimal lees stirring, aged ~14–18 months in older demi-muids; little/no filtration.
