Tasting Note

Crisp, citrus-led white: grapefruit, lime zest, green apple and white flowers with saline, stony minerality, lively acidity and a focused, light-to-medium palate; subtle oak adds tension without weight.

Western: oysters, grilled white fish, seared scallops, roast chicken with herbs, soft goat cheese. Asian: sushi/sashimi, tempura prawns, steamed white fish with ginger-soy, Vietnamese fresh spring rolls.


Production Method

Hand-harvested Chardonnay fermented largely in older 350L oak barrels (small % new), native yeasts, minimal lees stirring, malolactic completed, then racked to tank.
