Tasting Note
Deep ruby with black-plum, blackberry, dark cherry, spice, earth and subtle graphite. Medium-full, ripe fruit, mealy powdery tannins and a long, spice-laced finish.

Roasted lamb, wagyu short ribs, peppered steak, charcoal-grilled meats; Xinjiang lamb skewers, Mongolian BBQ, dark-soy braised dishes, spicy northern Chinese stews; aged hard cheeses, mushroom or truffle dishes.
Production Method
Organically grown (Ecocert). Hand-harvested, fermented in barrel, aged partly in Bordeaux barriques and large tonneaux (approx. 12–24 months). Minimal-intervention approach.
