Tasting Note
Baked dark cherries, blueberry compote, roasted herbs, sesame, black pepper, menthol and clove; mineral lift. Juicy, full-bodied with firm yet silky tannins and a bright finish.

Western: grilled lamb chops, roast beef, beef stews, aged cheeses (cheddar, manchego). Asian: Peking duck, char siu, Sichuan beef, Korean BBQ, braised short ribs, spicy lamb skewers.
Production Method
Organically grown grapes; native-yeast fermentation with ~7 days post-fermentation skin maceration; aged in a mix of stainless tanks and second‑fill barrels (12–24 months); lightly filtered/unfiltered with low sulfur.

Puchang Vineyard in Turpan Valley (Xinjiang), established 1975 and purchased by K.K. Cheung in 2008. Certified organic (Ecocert) and led by winemaker Loris Tartaglia.
