Tasting Note
Deep ruby with perfumed black- and red-cherry, cocoa, licorice and violet notes. Smooth entry, elegant mid-palate with creamy dark cherry, smoky plum, sandalwood and sweet spice; long, mouth-coating finish (Amarone-like richness).
Food Pairing
Western: roast lamb, braised short rib, aged hard cheeses, mushroom ragù. Asian: Peking duck, Xinjiang-style lamb skewers, spicy Szechuan beef, braised pork belly (hong shao rou).
Production Method
Fermented in stainless steel; aged 12 months in third-fill 500L and 225L oak barrels, then bottle-aged ~18 months before release.
