Tasting Note
Blackcurrant, blackberry and damson with violet, lemon rind, clove, tobacco and cedar. Medium-full body, bright acidity, fine powdery tannins and a mineral, focused finish. Elegant and balanced, approachable young with good ageing potential.

Western: roast lamb, beef tournedos, duck breast, aged comté or hard cow cheeses. Asian: Peking duck, char siu, Korean BBQ (galbi), mushroom stir-fry, Cantonese roasted meats.
Production Method
Hand-harvested; fermentation in temperature-controlled concrete/stainless vats, malolactic fermentation; ~16 months in oak barrels (c.50% new).
