Tasting Note

Concentrated blackcurrant and black cherry with violet and tobacco notes, cedared oak, graphite and saline minerality. Polished, grainy tannins, bright acidity and a long, savory finish with floral lift.


Food Pairing

Roast lamb, beef short ribs, mushroom risotto, aged Gouda or Comté; Asian: Peking duck, char siu (roast pork), miso‑glazed aubergine, bulgogi or grilled Korean short ribs.


Production Method

Hand-harvested, plot‑selected fermentations (concrete vats), aged 14–16 months in approx. 40% new French oak before bottling.
