Tasting Note
Floral lift of rockrose and potpourri with ripe black cherry, plum, dark chocolate and spice. Medium–full-bodied, concentrated fruit, bright acidity, powdery firm tannins and a mineral, lingering finish.

Western: grilled lamb, roast beef, venison, braised short ribs, aged cheeses. Asian: Korean BBQ (bulgogi), char siu, Peking duck, Chinese braised beef, soy/teriyaki-glazed meats.
Production Method
Hand-harvested, hand-sorted and destemmed; fermented (≈25°C) with selected yeast; matured ~12 months in used French oak (400L) barrels.

Prats & Symington is a 1999 partnership between the Prats (Bordeaux) and Symington families. Fruit comes from Quinta de Roriz and Quinta da Perdiz; Quinta de Roriz dates to 1565.
