Tasting Note
Concentrated dark cherry, blackcurrant and plum with mocha, violet and Mediterranean herb nuances. Elegant, fine-grained tannins, bright acidity and a mineral, long, polished finish.

Food Pairing
Western: roast lamb, grilled ribeye, braised short ribs, mature sheep cheeses. Asian: Peking duck, Korean BBQ (bulgogi), Szechuan beef, char siu pork, mushroom hot pot.

Production Method
Careful selection of vineyard lots, long Bordeaux-style maceration and aged 12–15 months in 400L French oak barrels (c.80% new), gentle extraction to preserve aromatic finesse.
