Tasting Note
Bright ruby with violet, red berry and blackberry notes, menthol/licorice undertones, evolving to truffle and sous-bois. Silky texture, medium body, grainy but caressing tannins and a long mineral-tinged finish.

Western: roast duck, roasted lamb, mushroom risotto, grilled salmon with herbs. Asian: Peking duck, miso-glazed black cod, char siu, soy/ginger braised mushrooms, yakitori (chicken thigh).
Production Method
Hand-harvested Pinot Noir, cold maceration (~7 days), regulated fermentation with daily pigeage, ~21 day maceration; aged on fine lees in French oak (~15 months, ~30% new), natural malolactic, minimal SO2, bottled without fining/filtration.
