Tasting Note
Black and red berry core with olive tapenade, sage/oregano herb notes, smoked meats, pepper and slate minerality. Fresh acidity, layered/firm tannins and a long savory finish.
Food Pairing
Western: grilled lamb chops, roast beef, venison, mushroom risotto, aged hard cheeses. Asian: Korean BBQ (galbi), char siu, Sichuan pepper beef, braised beef short ribs, teriyaki beef skewers.
Production Method
Hand-harvested Syrah; whole‑bunch submerged‑cap fermentation in concrete; aged ~12 months in large foudre and concrete eggs with minimal new oak; bottled after extended bottle ageing.
Vineyard Info
Single‑site Porseleinberg on blue‑schist soils in the Porseleinberg mountain (Swartland). Project started by Marc Kent, farmed and vinified by Callie Louw; replanted to Syrah/Grenache and focused on terroir‑driven Syrah.
