Tasting Note
Blackcurrant and blackberry with violet, cedar, graphite and warm spice. Medium–full, creamy texture with bright acidity, fine-grained tannins and saline minerality, finishing long, savory and focused.

Food Pairing
Western: roast lamb, ribeye/steak, beef stews, aged hard cheeses. Asian: Peking duck, char siu, Korean braised short ribs, Szechuan beef, umami mushroom hot pot.

Production Method
Hand-harvested; fermented in concrete and stainless vats; aged ~16–20 months (≈50% new French oak, 35% amphora, remainder in once-used barrels). Certified organic and biodynamic viticulture.

Château Pontet-Canet, an 1855 Fifth Growth in Pauillac (81 ha), family-owned by the Tesserons and a longtime pioneer of organic/biodynamic practices in Bordeaux.
