Tasting Note
Intensely dark with purple glints; aromas of graphite, cedar, dark wild fruits and floral lift. Plush, layered palate with soft, finely grained tannins, lively acidity and a long, subtly smoky finish.

Western: grilled ribeye, roast lamb, game birds, mature hard cheeses. Asian: Peking duck, char siu, Korean BBQ (bulgogi), soy-braised beef, Sichuan beef with moderate heat.
Production Method
Organic/biodynamic viticulture, gravity-fed cellars; 2019 used manual sorting and punchdowns; aged in a mix of new and used oak and amphora/concrete (16–18 months).
