Tasting Note
Pure Pauillac: red and black currant, crushed plum, graphite, violet and pencil lead with cedar and tobacco. Medium‑full, energetic acidity, silky fine tannins and a long mineral‑tinged finish.

Western: roast lamb, grilled ribeye, beef fillet, game birds, aged hard cheeses. Asian: Peking duck, char siu or Cantonese roast pork, Korean bulgogi or galbi, beef rendang, braised short ribs (Korean or Chinese).
Production Method
Biodynamic viticulture; hand sorting and partial destemming (first year with new sorting in 2017); fermented in vats, aged ~16–18 months in 50% new oak, 35% amphora/concrete, 15% one‑year barrels.
