Tasting Note

Concentrated blackcurrant and blackberry with graphite, cedar, menthol and pencil-lead notes; firm grainy tannins, lively acidity, medium–full body and a long spice-tinged finish.

Western: roast lamb, ribeye/steak, beef bourguignon, game, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ short ribs, beef rendang, spicy Sichuan beef.


Production Method

Biodynamic viticulture (Demeter certified), hand-harvested; fermentation in concrete and stainless steel vats; aged 16–20 months in French oak (c.60% new).

Château Pontet-Canet, a 1855 Fifth Growth in Pauillac owned by the Tesseron family; 80ha vines on gravel soils, biodynamically farmed since 2010.
