Tasting Note

Earthy and savory with cassis, red cherry, cedar, tobacco leaf and subtle mushroom; medium-full body, refined grainy tannins, bright acidity and a long oolong/herbal finish.


Food Pairing

Western: roast lamb, ribeye or flank steak, braised short ribs, venison, duck confit. Asian: Peking duck, char siu, Korean bulgogi, beef rendang, mushroom hotpot or soy-braised beef.


Production Method

Biodynamic viticulture, hand-harvested; fermented in concrete/stainless vats, with ~30–35% matured in amphorae/cement eggs and aged in French oak barrels.

Cinquièmes Crus Pauillac estate (Pontet-Canet), owned by the Tesseron family; pioneer of biodynamic practices in Bordeaux, ~80ha under vine on gravel soils across from Château Mouton Rothschild.
