Tasting Note
Fresh cherries, crushed strawberries, violet and sous-bois, with limestone minerality. Medium‑full palate, velvety yet firm tannins and a persistent, slightly austere finish that will show gamey, leathery and truffle notes with cellar time.

Roast or braised red meats (beef, venison), duck (Peking duck, roasted duck), mushroom risotto, char siu pork, miso‑glazed fish, coq au vin, aged cheeses; pairs well with both western and Asian umami-rich dishes.
Production Method
Hand‑harvested Pinot Noir, traditional Burgundian vinification with controlled fermentations and élevage in French oak barrels (part new), aged c.12–18 months; produced in collaboration with Étienne de Montille.
