Tasting Note
Pale yellow with sea-green reflections. Aromas of white peach, apricot, Sicilian citrus, white melon and tropical fruit with chestnut honey and fresh hay. Crisp acidity, saline freshness and a slim, balanced texture with good persistence.

Food Pairing
Western: seafood risotto, grilled white fish, goat cheese, salads, roasted vegetables. Asian: sushi/sashimi, sashimi-style ceviche, Thai fish dishes, Vietnamese spring rolls, light Chinese seafood stir-fries.

Production Method
Organic cultivation; grapes refrigerated, destemmed, soft-pressed. Static must decantation (36h), fermentation at 15–16°C in stainless steel, aged on fine lees with weekly stirring, blended and bottled.
