Tasting Note
Delicate, floral red with rose and hibiscus, dusty black cherry, wild fennel, white pepper and incense. Saline, volcanic mineral core, fine-grained tannins and bright acidity; long, fresh finish.

Food Pairing
Western: grilled lamb, roast beef, game, truffle pasta, aged pecorino. Asian: Peking duck, miso-glazed black cod, spicy Sichuan beef, mushroom ramen or soba, teriyaki beef.

Production Method
Hand-harvested; gentle fermentation with extended maceration (cap submerged up to ~21–40 days); matured about 12 months in large oak casks (25–36 hl); bottled under cork.
