Tasting Note
Lush, honeyed icewine with aromas of lychee, ripe peach, apricot, candied orange peel and floral honey. Palate shows pineapple, tropical fruit and concentrated orange-citrus, with a voluptuous texture and bright balancing acidity for a long, sweet finish.
Food Pairing
Western: blue cheese, foie gras, lemon tart, crème brûlée, aged cheddar. Asian: mango sticky rice, Chinese egg tarts, mooncakes, coconut-based desserts, light Peking duck with hoisin.
Production Method
Hand-harvested at sub-zero temperatures; naturally frozen Vidal grapes are pressed while frozen to concentrate sugars, then cold, slow fermentation in stainless steel produces low-alcohol, high-sugar dessert wine. VQA Niagara production standards.
