Tasting Note
Racy Blanc de Blancs: bright lemon and tangerine peel, Mirabelle plum, marzipan and dried white flowers, with brioche/toasted hazelnut and pronounced saline, chalky minerality on a long, focused citrus finish.

Western: oysters, lobster, crab, seared scallops, smoked salmon, creamy risotto, roast chicken, soft cheeses. Asian: sushi/sashimi, tempura, dim sum, delicate Thai or Vietnamese seafood salads, soy-butter lobster.
Production Method
100% Chardonnay from four Grand Cru parcels; hand-harvested, vinified in small vats, aged on fine lees, low dosage (~4–5 g/L). Disgorged December 19, 2023 (vintage 2019).
