Tasting Note
Pale gold with fine mousse. Bright citrus, green apple and white flowers lead to brioche, toasted almond and chalky minerality. Vibrant acidity, creamy texture and a long, elegant finish.
Food Pairing
Oysters, fresh shellfish, sushi/sashimi, smoked salmon, tempura, steamed lobster, roasted chicken with lemon, creamy soft cheeses (Brie, Camembert), dim sum, light pasta with cream and herbs.
Production Method
Traditional method (méthode champenoise). NV blend based on a recent base vintage with ~45–50% perpetual reserve wines stored in foudres, concrete and stainless; lees aging before blend; disgorged after extended aging; dosage ~6–6.5 g/L.
Vineyard Info
