Tasting Note
Ripe white peach, pear and lemon zest with acacia blossom, light toasted hazelnut and subtle vanilla from oak. Silky texture, bright saline minerality, fresh acidity and a long chalky finish.

Food Pairing
Western: roast chicken, lobster, scallops, beurre blanc, creamy pasta, aged Comté. Asian: miso‑glazed cod, sushi (fatty fish), tempura, steamed fish, lightly spiced Thai or Vietnamese seafood dishes.

Production Method
Pneumatic pressing, barrel fermentation (approx. 30% new oak), aged 12–18 months on fine lees with periodic bâtonnage; light fining and filtration before bottling.
