Tasting Note
Pale yellow; aromas of citrus, linden blossom and apricot with subtle vanilla. Palate shows grapefruit skin, candied orange, buttered toast, saline minerality and vibrant acidity, textured mid-palate and a clean, persistent finish.

Oysters, shellfish, sushi/sashimi, salmon carpaccio, seafood pasta, saffron risotto, roasted chicken, grilled sea bass, Chaource or Brillat-Savarin cheeses, tempura and mild Thai/Chinese seafood dishes.
Production Method
Gentle pneumatic pressing (4–5 hours), alcoholic and malolactic fermentation in 350–450L oak barrels (≈10% new), aged c.18 months; fined/filtered as needed.
