Tasting Note

Golden-yellow; aromas of white stone fruit, citrus blossom, light spice and toasted nuts. Palate is broad and creamy with ripe apple, lemon zest, subtle vanilla/oak and fresh minerality, finishing long and elegant.


Food Pairing

Western: oysters, grilled scallops, beurre blanc fish, salmon carpaccio, roast chicken, mushroom risotto, creamy cheeses (Chaource, Brillat-Savarin). Asian: sushi/sashimi, tempura, miso-glazed cod, chicken katsu, mild Thai green curry.


Production Method

Old-vine Chardonnay; hand-harvested, natural fermentation with partial malolactic, élevage in oak barrels (lightly oaked) for several months before bottling.
