Tasting Note

Fresh pear, lime zest and white flowers with toasted almond, brioche and a chalky mineral finish; bright acidity and saline tension with ripe orchard fruit and subtle spice.

Western: grilled or roasted white fish (sea bass, dorade), roast chicken, creamy pasta, soft cheeses (Brie, Camembert). Asian: sashimi or sushi, steamed fish with ginger and scallions, tempura, mild Thai or Vietnamese seafood dishes.


Production Method

Hand-harvested, pneumatic pressing; indigenous-yeast fermentation and malolactic in oak; aged ~18 months in large 350–450L oak barrels with low new-oak percentage; low-intervention, organic viticulture.

Domaine Pierre Labet (Labet family of Vougeot) produces village and premier-cru Burgundies; wines vinified at Château de la Tour. Estate converted to organic practices (certified from 2021); François/Édouard Labet lead the domaine.
