Tasting Note

Mineral-driven and perfumed: blackberry, blueberry, violet, smoked bacon and exotic spice with graphite and saline minerality. Dense, velvety texture, youthful gripping tannins and very long, stony finish.

Western: roast lamb, braised short ribs, venison, aged sheep/sheddar cheeses. Asian: Korean BBQ (bulgogi), Peking duck, spicy Sichuan beef, char siu pork.


Production Method

Hand-harvested old-vine Syrah; frequent whole-cluster fermentation (variable by year), long maceration and élevage in older demi-muids and some French oak; minimal intervention, organic practices.
