Tasting Note
Apricot and white-peach fruit with orange blossom, verbena and a hint of Earl Grey; textured, honeyed mid-palate, bright mineral acidity, gentle oak spice and a long floral finish.

Food Pairing
Western: pan-seared sea bass or John Dory, scallops in beurre blanc, roast chicken with herbs, creamy risotto. Asian: Thai green curry, Vietnamese lemongrass chicken, sushi (salmon/tuna), spicy Sichuan prawns or prawn laksa.

Production Method
Whole-bunch pressing, cold settling, fermentation in stainless and large oak (demi-muids/foudres), aged ~12 months in 500–600L demi-muids; minimal fining, light filtration.
