Tasting Note

Fresh red cherry, raspberry and cranberry with violet, clove and blood-orange zest; earthy mushroom and subtle cigar/cedar notes. Bright acidity, silky fine tannins and medium body with a focused, savory finish.

Production Method

Hand-harvested old-vine fruit (~50–55 yrs). Partial whole-cluster fermentation (~50%), fermented in oak/neutral tanks and aged ~18 months in French oak (low % new). Estate follows organic/biodynamic or sustainable practices.

Family domaine reconstituted by Pierre Guillemot in 1946; today run by brothers Vincent and Philippe Guillemot. Estate ~8 ha in Savigny; long history of traditional Burgundian winemaking and recent organic certification.
