Tasting Note
Creamy, long white with nectarine, peach skin, honeysuckle, citrus and saline minerality; honeyed and slightly exotic as it ages, bright acidity and a crisp finish.
Food Pairing
Western: butter sauces, lobster, shellfish, freshwater fish, roast chicken, pork belly. Asian: miso-glazed black cod, steamed fish with ginger & scallion, sushi/sashimi.
Production Method
Estate-grown (70% Pinot Blanc/30% Chardonnay); fermented and barrel-aged in barrels made from mixed acacia and oak staves. Estate moved to organic viticulture (started 2015, certified 2022).
