Tasting Note
Aromas of cherries, raspberries and plums with peony and rose petal notes; medium-bodied, supple and fleshy with lively acidity, soft tannins and an enveloping core of red fruit—approachable now and will gain richness with age.
Food Pairing
Western: roasted lamb, duck breast, mushroom risotto, roast chicken, aged Brie and other semi-firm cheeses. Asian: Peking duck, char siu, bulgogi/Korean BBQ, miso-glazed salmon or teriyaki chicken.
Production Method
Hand-harvested and sorted; largely destemmed; fermented in stainless/concrete vats with punchdowns/remontage; aged 12–18 months in French oak (portion new) before bottling.
