Tasting Note
Blackcurrant, blackberry and violet aromas with graphite, cigar and licorice notes. Focused, medium‑full palate of dark fruit, saline minerality, fine chalky tannins and bright acidity; long, persistent finish with elegant cedar and spice.

Western: roast lamb, ribeye, beef Wellington, venison, cassoulet. Asian: Peking duck, char siu (Cantonese BBQ pork), Korean BBQ, braised short ribs, beef rendang, miso‑glazed eggplant.

Production Method
Hand-harvested; plot-by-plot selection; extended cold pre-fermentation; fermentation with estate wild yeasts; maceration at 24–29°C; aged 18 months in 70% new French oak.
