Tasting Note
Deep red color with spicy, smoky nose. Full attack, dense mid-palate of blackcurrant and dark plum, firm yet balanced tannins and a long, savory finish with tobacco and cedar accents.

Roast beef, leg of lamb, beef Wellington, aged hard cheeses; Asian: Peking duck, char siu, Korean BBQ (galbi), braised Sichuan beef, miso-glazed aubergine.

Production Method
Traditional 4-week fermentation in stainless steel vats; aged 18 months in French oak barrels; standard fining and filtration before bottling.
